Ingredients
- 1/4 cup quinoa, cooked
- 1/2 cup frozen peas
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup chopped mushrooms
- 1/4 cup chopped avocados
- 2 Tbsp chopped cilantro
- 2 Tbsp olive oil
- 1/4 tsp salt
Instructions
- 1. Heat the olive oil in a large pan over medium-high heat.
- 2. Add the onions, bell peppers, mushrooms, and peas, and cook until the vegetables are tender, about 5 minutes.
- 3. Add the cooked quinoa, tomatoes, cucumber, and avocados, and cook for an additional 2 minutes.
- 4. Season with salt, to taste.
- 5. Divide the vegan breakfast bowl between two bowls, and top with chopped cilantro.
