Ingredients

  • 1/4 cup quinoa, cooked
  • 1/2 cup frozen peas
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped avocados
  • 2 Tbsp chopped cilantro
  • 2 Tbsp olive oil
  • 1/4 tsp salt

Instructions

  1. 1. Heat the olive oil in a large pan over medium-high heat.
  2. 2. Add the onions, bell peppers, mushrooms, and peas, and cook until the vegetables are tender, about 5 minutes.
  3. 3. Add the cooked quinoa, tomatoes, cucumber, and avocados, and cook for an additional 2 minutes.
  4. 4. Season with salt, to taste.
  5. 5. Divide the vegan breakfast bowl between two bowls, and top with chopped cilantro.
