Sweet potatoes are believed to have originated in South and Central America. They were domesticated by the indigenous peoples of the Americas as early as 1000 BC and were later brought over to Europe and other parts of the world.
Legend has it that the ancient Incas believed that the sweet potato was a gift from their gods. They believed that it had healing properties and that it could even help fight off sickness.
Ingredients
- 2 sweet potatoes
- 2 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 tbsp lime juice
- 2 tbsp chopped fresh mint
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Wash the sweet potatoes and cut into cubes. Place the sweet potato cubes in a large bowl and toss with olive oil, cumin, and coriander.
- Transfer the sweet potatoes to the baking sheet and spread out in a single layer. Bake for 25 minutes until tender.
- In a small bowl, combine the lime juice and chopped mint. Drizzle over the baked sweet potatoes and serve.
